Most people cook bacon on heat that's much too high, which is why the fat overheats and smokes and spatters. The low side of medium heat generally results in leaner, crispier bacon, with no spatter and less lingering smell. But it takes FOR FUCKING EVER so I can see why a lot of folks don't bother.
