I don't see it so much as Ianto doubting Jack's feelings for him, as Ianto knowing that Jack is not someone you can pin down unless he wants to be pinned.

All throughout season two we saw them in an apparently stable and potentially monogamous relationship, but we also saw Ianto brush off the idea that he and Jack are 'together' in any kind of committed way. While Jack is giving Martha hints that he's dating the hot secretary, Ianto's making light of it -- they dabble, it doesn't matter if Gwen walks in on them, there's no reproach for Martha kissing Jack or Jack dancing with Gwen. So Ianto's not insecure about being loved, he's just protecting himself from when the inevitable (to him) happens.

But I think Jack realises that if anyone screws up this relationship it's 99% likely going to be him. :D

So -- Ianto wants to be perfect so Jack will stay interested as long as possible, which includes 1. not showing weakness and 2. not showing jealousy. Meanwhile, Jack is trying to figure out OH MY GOD IANTO WHAT DO YOU NEED FROM ME so that he can GIVE it to him so Ianto won't wander off or get annoyed.
