it's just he doesn't know how long he can hold onto Jack if he's imperfect and human, and Jack just kind of staring at him, because he's been wondering how he's going to hold Ianto's interest...

Thank you for that. I am not the only one it seems, who also sees where Ianto doubts Jack's feeling and vice versa. It is how I see them in the show, for all of Ianto's outwards confidence/ability in dealing with Jack, deep down he doesn't think Jack really cares for him and Jack is very similar about Ianto, although we see a little of his insecurities more ala Sleeper, where he was continually seeking Ianto's approval.
